With the Express Next credit card you can earn rewards both in-store and online, however, this is a store card, so the rule only applies to Express purchases, you can't use your card anywhere else. With general rewards credit cards you can earn rewards for all purchases you make anywhere and also redeem your rewards anywhere. Usually, rewards are unlimited and never expire.

Unfortunately, no. You can only redeem your rewards for Starbucks menu items, and only after you accumulate enough Stars. There is no opportunity to redeem for cash.
